Lemon, Sesame, and Garlic Hummus
3 1/2 cups / servings

 

[ INGREDIENTS ]

Garlic Cloves
Extra-Virgin Olive Oil
White Sesame Seeds
Tahini
Lemon Juice
Garbanzo Beans
Salt and Pepper
Orange Peel
Lemon Peel

 

 

 

[ INSTRUCTIONS ]

  1. In a blender or food processor, combine :
    1 - 3 Garlic Cloves, Peeled and Crushed;
    2 Tablespoons Extra-Virgin Olive Oil;
    2 Tablespoons White Sesame Seeds, Toasted;
    2 Tablespoons Tahini;
    2 Tablespoons Lemon Juice;
    1 Can (15 ounces) Garbanzo Beans, Drained, Liquid Reserved;.
  2. Blend, adding reserved garbanzo-bean liquid if needed until hummus reaches desired consistency.
  3. Season with salt and pepper to taste.
  4. Transfer the mixture to a medium serving bowl.
  5. Sprinkle :
    1 Tablespoon Orange Peel, Minced;
    1 1/2 Tablespoons Lemon Peel, Minced;
    around the beans.
  6. Chill in the refrigerator, tightly covered, until ready to serve.
