Spelt Flatbread with Za'atar

[ INGREDIENTS ]

DOUGH

Spelt Flour
Salt
Baking Soda
Coconut Oil
Water
Za'atar

 

TOPPING

Olive Oil
Za'atar

 

 

 

[ INSTRUCTIONS ]

  1. Preheat oven to 425 F or 220 C and line a large baking tray with parchment paper.
  2. Combine :
    2 Cups Spelt Flour;
    1/2 Teaspoon Salt;
    1/2 Teaspoon Baking Soda;
    in a bowl.
  3. Mix to combine.
  4. In the bowl of a stand mixer, add the flour mixture with :
    4 Tablespoons Coconut Oil;
    Handful Fresh Za'atar;
    and mix with a kneading hook while streaming :
    1/3 Cup Plus 3 Tablespoons Water;.
  5. Stir with a spoon occasionally to combine. 1
  6. Shape the dough into the size of 8 small plums.
  7. On a floured surface, flatten each ball with a rolling pin so that it is about 1/4 - 1/2 an inch thick.
  8. Transfer to baking pan.
  9. For the topping, combine :
    7 Tablespoons Olive Oil;
    9 Tablespoons Za'atar;
    in a small bowl and mix well.
  10. Brush the mixture onto the dough and bake for about 9 to 11 minutes.
  11. The bread should be golden from the bottom, soft, and tender. Serve right away!

 

 

 

[ NOTE ]

1 Add enough water so that the mixture holds together. Use 1/3 cup plus 3 tablespoons water. If you don’t have a stand mixer, you can most definitely do this by hand. Stir the mixture until it comes together and then knead only for a few minutes to combine.
