Cinnamon, Date, and Almond Granola

[ INGREDIENTS ]

Rolled Oats
Whole Almonds
Pumpkin Seeds
Dried Shredded Coconut
Coconut Oil
Dates
Cinnamon
Honey or Maple Syrup
Salt

 

 

 

[ INSTRUCTIONS ]

  1. Preheat oven to 325 F or 160 C.
  2. Line a large baking tray with parchment paper.
  3. Combine :
    2 Cups Rolled Oats;
    1/2 Cup Whole Almonds, Coarsely Chopped;
    Handful of Pumpkin Seeds;
    1/4 Cup Dried Shredded Coconut;
    1/3 Cup Coconut Oil, Melted;
    4 Dates, Pitted and Coarsely Chopped;
    2 Teaspoons Cinnamon;
    1/3 Cup Honey or Maple Syrup;
    Generous Pinch Salt;
    in a large bowl and mix together.
  4. Spread the granola mixture onto the baking tray.
  5. Bake in the oven for about 30 minutes or until golden.
  6. Leave to cool for at least 15 minutes before serving.
  7. Store in an airtight container for up to a week.
