- Preheat oven to 325 F or 160 C.
- Line a large baking tray with parchment paper.
- Combine :
 2 Cups Rolled Oats;
 1/2 Cup Whole Almonds, Coarsely Chopped;
 Handful of Pumpkin Seeds;
 1/4 Cup Dried Shredded Coconut;
 1/3 Cup Coconut Oil, Melted;
 4 Dates, Pitted and Coarsely Chopped;
 2 Teaspoons Cinnamon;
 1/3 Cup Honey or Maple Syrup;
 Generous Pinch Salt;
 in a large bowl and mix together.
- Spread the granola mixture onto the baking tray.
- Bake in the oven for about 30 minutes or until golden.
- Leave to cool for at least 15 minutes before serving.
- Store in an airtight container for up to a week.
