Egg Sandwich with Mushroom Hash

[ INGREDIENTS ]

Coconut Oil
Potato
Mushrooms
Garlic
Eggs
Salt
Black Pepper
Rolls, or English Muffins, or Slices of Bread

 

 

 

[ INSTRUCTIONS ]

  1. Add :
    1 Teaspoon Coconut Oil;
    in a pan on medium heat.
  2. Add :
    1 Small Potato, Diced;
    and cook for 5 minutes, stirring minimally. 1
  3. Season with :
    Salt, to Taste;
    Black Pepper, to Taste;.
  4. Add the :
    1/2 Pound Mushrooms, Sliced;
    2 Cloves Garlic, Finely Chopped;
  5. Cook for another 5 minutes, until the mushrooms are brown and have shrunk down. 2
  6. Taste and adjust the seasoning.
  7. Melt :
    1 Teaspoon Butter;
    in another pan on medium heat.
  8. Crack :
    2 Eggs;
    into the pan and dust with
    Salt, to Taste;
    Black Pepper, to Taste;.
  9. Toast :
    2 Rolls, 2 English Muffins, or 4 Slices of Bread;
    then assemble it into a sandwich, using any condiments you like.

 

 

 

[ NOTE ]

1 Add a splash of water if the potatoes are getting stuck to the pan.

2 Test the potato by piercing one piece with a fork. If it goes through easily, they're done. If not, cook for a few more minutes. ( The smaller the potatoes are chopped, the quicker they’ll cook. )
