[ INGREDIENTS ]

2 Eggs
Bell Peppers
Mushrooms
Red Onion
Cherry Tomatoes
Fresh Spinach
Salt
Black Pepper
Fresh Parsley

 

 

 

[ INSTRUCTIONS ]

  1. Prepare :
    1/4 Cup Bell Peppers, Chopped;
    1/4 Cup Mushrooms, Chopped;
    2 Tablespoons Red Onion, Chopped;
    1/2 Cup Cherry Tomatoes, Chopped;
    1/2 Cup Fresh Spinach, Chopped;
  2. Mix together and set aside.
  3. Beat :
    2 Eggs;
    together until well blended.
  4. Add chopped vegetables and mix well.
  5. In a medium-size skillet over medium-high heat, pour eggs into pan and cook until edges are brown, approximately 2 to 3 minutes
  6. Flip omelet over and cook for an additional 2 to 3 minutes.
  7. Sprinkle :
    Salt, to Taste;
    Black Pepper, to Taste;
    2 Tablespoons Fresh Parsley;
    over top; and garnish with sliced onions.
