Orange and Almond Granola

Orange and Almond Granola

[ INGREDIENTS ]

Orange Zest ( from about 1 1/2 Oranges )
Sugar
Old-Fashioned Rolled Oats
Raw Almonds
Fine Sea Salt
Ground Cinnamon
Coconut Oil
Honey or Maple Syrup
Vanilla Extract

 

 

 

[ INSTRUCTIONS ]

  1. Preheat the oven to 350 F or 180 C.
  2. Line a large, rimmed baking sheet with parchment paper.
  3. In a small bowl, combine :
    2 Teaspoons Orange Zest ( from about 1 1/2 Oranges );
    2 Tablespoons Sugar;
    Use your fingers to rub the zest into the sugar until it’s bright orange and very fragrant.
    This step will ensure that your granola is infused with orange flavor.
  4. In a large mixing bowl, combine :
    4 Cups Old-Fashioned Rolled Oats;
    1 1/2 Cup Raw Almonds;
    1 Teaspoon Fine Sea Salt; 1
    1 Teaspoon Ground Cinnamon;
    Orange Sugar;.
  5. Stir to combine.
  6. Pour in :
    1/2 Cup Melted Coconut Oil;
    1/2 Cup Honey or Maple Syrup; 2
    1 Tablespoon Vanilla Extract;
    and mix well.
  7. Pour the granola onto your prepared baking sheet.
  8. Spread the granola into an even layer.
  9. Bake for 19 to 23 minutes, stirring halfway, until the granola is turning lightly golden in color.
  10. The granola will crisp up as it cools.
  11. Let the granola cool and break up the granola into chunks as necessary.
  12. Store the granola in an airtight container at room temperature for 1 to 2 weeks, or keep it in the freezer for longer shelf life.

 

 

 

[ NOTE ]

1 If using standard table salt, scale back to 3/4 teaspoon

2 Make it vegan: Substitute maple syrup for the honey.
