[ INGREDIENTS ]

Medium-Firm Tofu
Extra-Virgin Olive Oil
Garlic
Lemon Juice
Apple Cider Vinegar
Dried Dill
Salt
Black Pepper
English Cucumber

 

 

 

[ INSTRUCTIONS ]

  1. Add :
    1/2 Pound Medium-Firm Tofu, Drained;
    2 Tablespoons Extra-Virgin Olive Oil;
    2 Cloves Garlic, Minced;
    1 Tablespoon Lemon Juice;
    1 Teaspoon Apple Cider Vinegar;
    1 Teaspoon Dried Dill;
    1/4 Teaspoon Salt;
    1/8 Teaspoon Black Pepper;
    to a blender or food processor.
  2. Pulse several times until smooth stopping to scrape the sides as needed.
  3. Slice :
    1/2 English Cucumber;
    in half lengthwise then scoop out the seeds.
  4. Grate the seeded cucumber.
  5. Hand squeeze any excess water over the sink.
  6. Add the cucumber to the blender or food processor.
  7. Pulse a couple of times to incorporate.
