- Add :
1/2 Pound Medium-Firm Tofu, Drained;
2 Tablespoons Extra-Virgin Olive Oil;
2 Cloves Garlic, Minced;
1 Tablespoon Lemon Juice;
1 Teaspoon Apple Cider Vinegar;
1 Teaspoon Dried Dill;
1/4 Teaspoon Salt;
1/8 Teaspoon Black Pepper;
to a blender or food processor.
- Pulse several times until smooth stopping to scrape the sides as needed.
- Slice :
1/2 English Cucumber;
in half lengthwise then scoop out the seeds.
- Grate the seeded cucumber.
- Hand squeeze any excess water over the sink.
- Add the cucumber to the blender or food processor.
- Pulse a couple of times to incorporate.
