 [ INGREDIENTS ] FOR THE FRITTERS All-Purpose FlourSugar
 Baking Powder
 Ground Cinnamon
 Salt
 Eggs
 Almond Milk
 Unsalted Butter
 Vanilla Extract
 Granny Smith Apples
 Powdered Sugar
  
 FOR THE GLAZE ( Optional ) Powdered SugarSalt
 Vanilla Extract
 Almond Milk
  
  
  
 [ INSTRUCTIONS ] 
              Peel and dice :
 2 Whole Granny Smith Apples;.Set Aside.In a mixing bowl, combine :
 2 Cup All-Purpose Flour;1/2 Cup Sugar;
 2-1/4 Teaspoon Baking Powder;
 2 Teaspoon Ground Cinnamon;
 1-1/4 Teaspoon Salt;.
In a separate bowl, beat :
 2 Eggs;with a fork, then add : 
 3/4 Cup Almond Milk;2 Tablespoon Unsalted Butter, Melted;
 2 Teaspoon Vanilla Extract;.
Gently fold dry and wet ingredients together until just
                combined ( do not over mix ).Fold in the apples. 1Heat :
 2 Inches of Peanut Oil;in a dutch oven over medium heat. 2Drop 1 tablespoon of batter into the hot oil, six or eight at
                a time.Sometimes they'll flip over by themselves; sometimes you have
                to flip them.Just watch them and make sure they don't get too brown, but
                cook them long enough to make sure the batter's cooked through,
                about 2 to 2-1/2 minutes total.Repeat with the remaining batter.Remove fritters and drain on a paper towel.  
 FOR THE GLAZE ( Optional ) 
              In a medium bowl, whisk together :
 1-1/2 Cup Powdered Sugar;1/4 Teaspoon Salt;
 1/4 Teaspoon Vanilla Extract;
 1/4 Cup Almond Milk;.
Dust the fritters very generously with the powdered sugar, or
                dip fritters in the light doughnut glaze.Serve warm!  
  
  
 [ NOTE ] 1 Add enough apples to make a very
                chunky batter. The apples should shine though! 2 When it gets hot ( 350 F or 180
                C ), drop a little drop of batter into the oil. If it sizzles
                immediately and rises to the top, the oil is ready; if it burns
                quickly, turn down the heat.
