French Apple Cake

[ INGREDIENTS ]

CARAMELIZED APPLES

Butter
Sugar
Apples

 

CAKE BATTER

Eggs
Sugar
Vanilla Extract
All-Purpose Flour
Baking Powder
Salt

 

WHIPPED CREAM

Heavy Cream
Powdered Sugar

 

 

 

[ INSTRUCTIONS ]

  1. In a large saucepan, melt :
    1/2 Cup Butter;
    over medium heat.
  2. Add :
    2 Tablespoons Sugar;
    and stir with a wooden spoon.
  3. Add :
    1 1/2 Pound Apples, Peeled, Cored, and Chopped into Small Bite-size Pieces; 1
    and cook for about 10 minutes, stirring often, until apples are softened.
  4. Set aside to cool.
  5. Preheat oven to 350 F or 180 C.
  6. In a large mixing bowl, cream together :
    2 Large Eggs;
    3/4 Cup Sugar;
    1 Tablespoon Vanilla Extract;
    until light and fluffy.
  7. Add the :
    Browned Butter Apple Mixture;.
  8. Fold in :
    3/4 Cup Flour;
    1 Teaspoon Baking Powder;
    1/2 Teaspoon Salt;.
  9. Spray springform pan or a 9 inch x 9 inch cake pan with non-stick cooking spray.
  10. Pour batter into pan.
  11. Bake for 30 to 38 minutes or until a light golden brown color forms on the top and the cake is done in the middle. 2
  12. Set aside to cool.
  13. To make whipped cream, whip :
    1 1/2 Cups Heavy Cream;
    until soft peaks form.
  14. Add :
    1/3 cup Powdered Sugar;
    and whip for 30 seconds longer.
  15. Remove cake from springform pan.
  16. If using a cake pan, carefully invert the cake onto a cooling rack, and gently flip the cake over and place right-side-up on a serving platter.
  17. Dust with :
    Powdered Sugar, to Taste;.
  18. Cut into slices and serve with a generous dollop of whipped cream.

 

 

 

[ NOTE ]

1 Use baking apples such as Granny Smith, Fuji, or Gala

2 The top can become a little brown, cover with foil the last 10 minutes of baking.
