[ INGREDIENTS ]

Water
Penne Pasta
Coconut Oil
Garlic Cloves
Onion
Black Beans
Cumin
Enchilada Sauce
Chili Powder
Paprika
Bell Peppers
Corn
Salt
Black Pepper
Avocado Slices

 

 

 

[ INSTRUCTIONS ]

  1. In a large pot, bring :
    4 - 6 Quarts Water;
    to a rolling boil, add :
    Salt, to Taste;.
  2. Add :
    1 Box ( 16 Ounces ) Penne Pasta;
    to the boiling water.
  3. Stir gently to prevent the noodles from sticking together.
  4. Cook the pasta for 11 minutes.
  5. Remove from heat. Drain well.
  6. Add :
    1 Tablespoon Coconut Oil;
    to a large pan over medium to low heat.
  7. Finely chop :
    6 Garlic Cloves;
    and add to the pan.
  8. Stir the garlic and cook until it’s lightly golden brown, 3 to 5 minutes.
  9. Chop :
    3/4 Cup Onions;
    and add into the pan.
  10. Cook for 4 minutes until all is slightly golden and brown.
  11. Next add :
    1 Cup Black Beans, Cooked;
    1 Teaspoon Cumin;
    2 Cups Enchilada Sauce;
    1 Teaspoon Chili Powder;
    1/2 Teaspoon Paprika;
    1 Cup Bell Peppers, Chopped;
    1/2 Cup Corn;
    Salt, to Taste;
    Black Pepper, to Taste;
    to the pan.
  12. After cooking for 5 minutes add the cooked pasta and cook for 4 minutes more.
  13. Divide into bowls or plates, and serve with avocado slices on top.
