- In a large pot, bring :
4 - 6 Quarts Water;
to a rolling boil, add :
Salt, to Taste;.
- Add :
1 Box ( 16 Ounces ) Penne Pasta;
to the boiling water.
- Stir gently to prevent the noodles from sticking together.
- Cook the pasta for 11 minutes.
- Remove from heat. Drain well.
- Add :
1 Tablespoon Coconut Oil;
to a large pan over medium to low heat.
- Finely chop :
6 Garlic Cloves;
and add to the pan.
- Stir the garlic and cook until it’s lightly golden brown, 3 to 5
minutes.
- Chop :
3/4 Cup Onions;
and add into the pan.
- Cook for 4 minutes until all is slightly golden and brown.
- Next add :
1 Cup Black Beans, Cooked;
1 Teaspoon Cumin;
2 Cups Enchilada Sauce;
1 Teaspoon Chili Powder;
1/2 Teaspoon Paprika;
1 Cup Bell Peppers, Chopped;
1/2 Cup Corn;
Salt, to Taste;
Black Pepper, to Taste;
to the pan.
- After cooking for 5 minutes add the cooked pasta and cook for 4 minutes
more.
- Divide into bowls or plates, and serve with avocado slices on top.
