Okra in Onion Tomato Curry

[ INGREDIENTS ]

Coconut Oil
Mustard Seeds
Cumin Seeds
Onion
Green Chili
Garlic
Ginger
Okra
Turmeric
Coriander Powder
Cayenne
Tomatoes
Tomato Paste
Water
Salt
Garam Masala
Cilantro

 

 

 

[ INSTRUCTIONS ]

  1. Heat :
    1 Teaspoon Coconut Oil;
    in a skillet over medium heat, when hot, add :
    1/2 Teaspoon Mustard Seeds;
    1/2 Teaspoon Cumin Seeds;
    and cook until they start to pop or change color.
  2. Add :
    1/2 Medium Onion, Thinly Sliced;
    1 Green Chili, Finely Chopped;
    2 - 3 Cloves of Garlic, Finely Chopped;
    1/2 Inch Ginger, Finley Chopped;
    and cook until translucent about 4 minutes.
  3. Add :
    2 1/2 Cups Okra, Chopped;
    Pinch of Salt;.
  4. Cook for 10 minutes or until golden on some edges.
  5. Stir occasionally.
  6. Roasting the okra till the edges dry out a bit will seal in the slime.
  7. Add :
    1/4 Teaspoon Turmeric;
    3/4 Teaspoon Coriander Powder;
    Cayenne, to Taste;
    3/4 Cup Tomatoes, Chopped;
    2 Teaspoons Tomato Paste;
    1/4 Cup Water;
    1/2 Teaspoon Salt;.
  8. Cover and cook until tomatoes are cooked about 6 minutes.
  9. Taste and adjust :
    Salt;
    Turmeric;
    Coriander Powder;
    Cayenne;
  10. Mash the larger tomato pieces.
  11. Sprinkle some :
    Garam Masala;
    and mix in.
  12. Garnish with :
    Cilantro;.

 

 

 

[ NOTE ]

Add some dry mango powder with the tomatoes.
Add in some coconut milk for a creamier sauce.
