TZATZIKI SAUCE
English Cucumber
Lemon
Yogurt
Extra Virgin Olive Oil

[ INSTRUCTIONS ]
OYSTER MUSHROOM SHAWARMA
- Mix together :
1 Teaspoon Cumin;
1 Tablespoon Thyme;
1 Tablespoon Cajun Seasoning;
1 Teaspoon Zaatar;
1 Teaspoon Smoked Paprika;
1 Teaspoon Garlic Powder;
1 Teaspoon Celery Salt;
in a small bowl.
- In a separate bowl add :
2 Tablespoons Extra-Virgin Olive Oil;
to :
1 Punnet Oyster Mushrooms;.
- Sprinkle the mixed spices on top and mix well to coat.
- In a skillet add :
3 Tablespoons Extra-Virgin Olive Oil;
then add in the mushrooms.
- Place something heavy on top, like another pan or a bowl and press down.
- Let the mushrooms cook for 3 to 4 minutes or until charred slightly.
- Flip the mushrooms and repeat the process.
SALAD
- Now mix together :
1 Garlic Clove, Minced;
1/2 Lemon, Juiced;
2 Tablespoon Extra Virgin Olive Oil;
3 Roma Tomatoes, Diced;
1/4 Cucumber, Diced;
1/4 Red Onion, Diced;
1 Handful Fresh Parsley, Finely Chopped;
Salt, to Taste;
in a bowl.
TZATZIKI SAUCE
- Add :
1 English Cucumber, Diced;
1 - 2 Tablespoons Lemon, Juiced;
1 and 1/2 Cups Yogurt;
2 tablespoons Extra-Virgin Olive Oil;
1 Garlic Cloves, Minced;
1 Tablespoon Dill Fresh, Finely Chopped;
Salt, to Taste;
Black Pepper, to Taste;
in another bowl.
TOPPINGS
- Heat up your flatbread or pita bread.
- Load on the salad and tzatziki sauce, then the mushroom shawarma.
- Top with :
Chillies, to Taste;
and
Pickled Red Onions, to Taste;.
