All Veggie Sandwich

[ INGREDIENTS ]

Bakery Style Bread
Hummus
Avocados
Baby Spinach Leaves
Cucumber
Red Bell Pepper
Fresh Pea Shoots
Cilantro Leaves
Salt
Black Pepper

 

 

 

[ INSTRUCTIONS ]

  1. Place :
    4 Slices Bakery Style Bread;
    on a large plate.
  2. Spread :
    1 Tablespoon Hummus;
    on each slice of bread.
  3. Then add :
    1/2 Avocado
    per slice and lightly mash with a fork.
  4. Depending on the size of your bread slices, you may need to use a little less avocado.
  5. Layer on :
    Baby Spinach Leaves;
    Cucumber, Thinly Sliced;
    1 Red Bell Pepper, Seeded and Sliced;
    Fresh Pea Shoots;
    Cilantro Leaves;
  6. Season with :
    Salt, to Taste;
    Black Pepper, to Taste;.
  7. Top with other slice of bread and enjoy.

 

 

 

[ NOTE ]

This sandwich is super versatile. You can play around with just about any veggies of choice and layer on as you like. The key is plenty of hummus and avocado so the sandwich is not dry and different texture of veggies.
