Chickpea Salad Sandwich

[ INGREDIENTS ]

Chickpeas
Celery
Green Onions
Dill Pickle
Red Bell Pepper
Vegan Mayonnaise
Garlic
Yellow Mustard
Fresh Dill
Fresh Lemon Juice
Salt
Black Pepper

 

 

 

[ INSTRUCTIONS ]

  1. In a large bowl, mash :
    1 ( 14 Ounce ) Can Chickpeas, Drained and Rinsed;
    with a potato masher until flaked in texture.
  2. Stir in :
    2 Stalks Celery, Finely Chopped;
    3 Green Onions, Thinly Sliced;
    1/4 Cup Finely Chopped Dill Pickle;
    1/4 Cup Finely Chopped Red Bell Pepper;
    3 Tablespoons Vegan Mayonnaise;
    1 Clove Garlic, Minced;
    until combined.
  3. Now, stir in :
    1 1/2 Teaspoons Yellow Mustard;
    2 Teaspoons Minced Fresh Dill ( Optional );
    and season with :
    1 1/2 - 3 Teaspoons Fresh Lemon Juice, to Taste;
    1/4 Teaspoon Salt;
    Black Pepper, to Taste;.
  4. Serve with toasted bread, on crackers, wraps, or on top of a basic leafy green salad.
  5. Or just enjoy it all on its own!

 

 

 

[ NOTE ]

For a soy-free version of this salad, use soy-free vegan mayonnaise.
Veganaise makes a great soy-free version.
