French Toast Peanut Butter and Jelly

[ INGREDIENTS ]

Almond Milk
Egg
Baking Powder
Vanilla Extract
Salt
Bread
Strawberry Preserves
Peanut Butter

Coconut Oil
Powdered Sugar

 

 

 

[ INSTRUCTIONS ]

  1. Combine :
    2/3 Cup Almond Milk
    1 Large Egg, Lightly Beaten
    1/2 Teaspoon Baking Powder
    1/2 Teaspoon Vanilla Extract
    1/8 Teaspoon Salt
    in a medium shallow dish, stirring well with a whisk.
  2. Place :
    8 Slices of Bread;
    on a flat surface.
  3. Spread :
    2 Tablespoons Strawberry Preserves;
    over 4 bread slices, and spread :
    1 1/2 tablespoons peanut butter;
    over each of the remaining 4 bread slices.
  4. Assemble sandwiches.
  5. Carefully dip 2 sandwiches in the milk mixture, turning to coat.
  6. Heat a large skillet over medium-high heat.
  7. Add :
    1 1/2 Teaspoons Coconut Oil;
    to pan; swirl to coat.
  8. Place coated sandwiches in pan; cook 2 minutes on each side or until toasted.
  9. Remove sandwiches from pan.
  10. Repeat procedure with the remaining two ( 2 ) sandwiches.
  11. Sprinkle with :
    1 Tablespoon Powdered Sugar;
    evenly over sandwiches.
  12. Cut each sandwich in half diagonally.
