Sloppy Lentils

Sloppy Lentils
4 - 6 servings

 

[ INGREDIENTS ]

Coconut Oil
Onion
Brown or Green Lentils
Vegetable Broth
Tomato Sauce
Sugar
Molasses
Apple Cider Vinegar
Tamari or Soy Sauce
Tomato Paste
Garlic Powder
Mustard Powder
Cayenne Pepper
Salt
Black Pepper
Hamburger Rolls

 

 

 

[ INSTRUCTIONS ]

  1. Heat :
    2 Teaspoons Coconut Oil;
    in a large saucepan over medium heat.
  2. Add :
    1 Small Onion, Chopped;
    and cook until softened and just beginning to brown, 5 to 7 minutes.
  3. Add :
    1 Cup Brown or Green Lentils, Rinsed and Picked Over;
    2 Cups Vegetable Broth;
    bring to a boil, then partially cover and reduce heat to low.
  4. Simmer for 20 minutes, or until the lentils are tender enough to eat, but still firm enough to hold their shape ( not mushy ).
  5. Stir in :
    1 Can ( 15 Ounce ) Tomato Sauce;
    1 Tablespoon Sugar;
    1 Tablespoon Molasses;
    1 Tablespoon Apple Cider Vinegar;
    1 Tablespoon Tamari or Soy Sauce;
    1 Tablespoon Tomato Paste;
    1 Teaspoon Garlic Powder;
    1 Teaspoon Mustard Powder;
    Pinch of Cayenne Pepper ( Optional );
    Salt, to Taste;
    Black Pepper, to Taste;.
  6. Increase the heat to medium and bring to a boil.
  7. Continue to cook the lentils until the sauce has thickened, 10 to 15 minutes more, stirring frequently.
  8. Serve the lentils on :
    4 - 6 Hamburger Rolls ( Optional );.
