[ INGREDIENTS ]

MUSHROOMS / ARTICHOKE FILLING

Extra Virgin Olive Oil
Red Onion
Garlic
Cumin
Ground Cinnamon
Ground Cloves
Ground Black Pepper
Dried Oregano
Tomato Paste
King Oyster, Shiitake, and Shimeji Mushrooms
Marinated Artichokes
Liquid Smoke
Dark Soy Sauce
Maple Syrup

 

SERVING

6 Pita Breads
Shredded Lettuce
Sliced Cucumber
Sliced Radishes
Sliced Cherry Tomatoes
Vegan Tzatziki

 

 

 

[ INSTRUCTIONS ]

  1. Preheat oven to 400 F or 200 C.
  2. Add :
    2 Tablespoon Extra Virgin Olive Oil;
    1 Medium Red Onion, Sliced;
    to an oven-proof frying pan or skillet and saute until the onions are softened.
  3. Then add :
    1 Tablespoon Crushed Garlic;
    1/4 Teaspoon Cumin;
    1/4 Teaspoon Ground Cinnamon;
    1/8 Teaspoon Ground Cloves;
    1/4 Teaspoon Ground Black Pepper;
    1/2 Tablespoon Dried Oregano;
    and saute for a minute until the spices are well mixed with the onions.
  4. Add :
    2 Tablespoon Tomato Paste;
    and mix in until well mixed.
  5. Add :
    14 Ounce Mix of King Oyster, Shiitake, and Shimeji Mushrooms, Shredded; 1
    1 and 1/3 Cups Marinated Artichokes, Drained and Quartered; 2
    and fry until softened.
  6. Add :
    1/4 Teaspoon Liquid Smoke;
    2 Tablespoon Dark Soy Sauce;
    2 Tablespoon Maple Syrup;
    and fry until all the liquid has cooked off and the sauce is sticky.
  7. Then place your whole pan into the oven and bake for 25 minutes.
  8. While the mushrooms / artichokes are baking, prepare the other ingredients: pita breads, shredded lettuce, sliced cucumbers, sliced radishes and sliced cherry tomatoes.
  9. Make up a batch of vegan tzatziki.
  10. When the mushrooms / artichokes are baked, assemble your gyros.
  11. Lay a pita bread flat and spread the middle with tzatziki.
  12. Then add lettuce, cucumber, radish and cherry tomatoes.
  13. Then add your mushroom/artichoke mix on top of that and top it with more tzatziki.
  14. Fold up the edges of the pita bread around your filling and enjoy!

 

 

 

[ NOTE ]

1 Use any mix of these mushrooms or only king oyster or only shiitake or whatever is easiest. Shiitake mushrooms should have their stems removed.

2 The artichokes should be marinated artichokes that you buy in a jar.
