Baked Popcorn Okra

[ INGREDIENTS ]

Okra

 

BATTER

Chickpea Flour
Water
Garlic
Salt
Coconut Oil

 

BREADING

Breadcrumbs
Nutritional Yeast
Chipotle Pepper Powder
Ground Cumin
Paprika
Turmeric ( Optional )
Garlic
Onion Powder
Oregano
Salt

 

 

 

[ INSTRUCTIONS ]

  1. Chop :
    1 1/2 - 2 Cups Okra;.
  2. In a bowl mix :
    1/3 Cup Chickpea Flour;
    1/2 Cup Water;
    1/4 Teaspoon Garlic;
    1/4 Teaspoon Salt;
    1 Teaspoon Coconut Oil;.
    It should be the consistency of thick buttermilk.
    Add a few teaspoon more water or flour if needed.
  3. In another bowl, mix :
    1 Cup Breadcrumbs;
    1 1/2 Tablespoon Nutritional Yeast;
    1/2 Teaspoon Chipotle Pepper Powder;
    1/4 Teaspoon Ground Cumin;
    1/2 Teaspoon Paprika;
    1/4 Teaspoon Turmeric ( Optional );
    1/2 Teaspoon Garlic;
    1/4 Teaspoon Onion Powder;
    1/2 Teaspoon Oregano;
    1/2 Teaspoon Salt;.
  4. Preheat the oven to 425 F or 220 C.
  5. Add chopped okra, a half cup at a time into the batter bowl, remove using slotted spoon, tap to drop the excess batter.
  6. Transfer to breading bowl.
  7. Move the pieces around to coat, transfer to baking sheet.
  8. Repeat for all the okra.
  9. Spray oil on the breaded okra.
  10. Bake for 20 to 23 minutes or until golden.
  11. Serve warm with chutneys, ketchup or sauces of choice!

 

 

 

[ NOTE ]

Use other spice blend like cajun, garam masala or blackeing spice blend for variation.

To make oil-free, omit the oil.
