Chocolate Peanut Butter Pretzels

Chocolate Peanut Butter Pretzels

[ INGREDIENTS ]

PRETZELS

Almond Milk
Active Dry Yeast
All-Purpose Flour
Unsalted Butter
Baking Soda
Coarse Salt
Peanut Butter

 

CHOCOLATE

Dark Chocolate
Coconut Oil

 

 

 

[ INSTRUCTIONS ]

PRETZELS

  1. To make the pretzels add :
    1 Cup Almond Milk;
    to a mixing bowl and sprinkle :
    1 Package Active Dry Yeast;
    over it.
  2. Let it sit for 2 minutes.
  3. Add that to the bowl of a stand mixer or large mixing bowl and add :
    1 Cup All-Purpose Flour;
    along with :
    2 Tablespoons Unsalted Butter, Softened;
    and use the whisk attachment to whisk until smooth.
  4. Add to the bowl :
    1 1/4 Cups All-Purpose Flour;.
  5. Use the dough attachment to knead until it forms a smooth dough.
  6. Cover with plastic wrap and allow to rise for 1 hour.
  7. Preheat oven to 450 F or 230 C.
  8. Sprinkle flour on a work bench and cut the dough into 8 pieces.
  9. Use the palm of your hands to roll dough into 30 inch ropes.
  10. Form into pretzel shapes.
  11. Pour :
    3 Cups Boiling Water;
    into a baking dish and sprinkle with :
    1/3 Cup Baking Soda;
    on top.
  12. Stir to dissolve.
  13. Gently dip the pretzels in the water and then place on baking trays ( two on each baking tray ) lined with baking paper.
  14. Melt :
    8 Tablespoons Unsalted Butter;.
  15. Brush the pretzel with the melted butter and sprinkle with coarse salt.
  16. Bake for 10 to 12 minutes and allow to cool.

CHOCOLATE

  1. To prepare chocolate, add :
    400g Dark Chocolate;
    2 Tablespoons Coconut Oil;
    into a large microwave safe bowl and microwave for 20 second at a time, mixing each time until smooth.
  2. Use kitchen tongs to dip the pretzels into the chocolate, allow any excess to drip off before transferring to a wired rack.
  3. Drizzle with :
    Peanut Butter or Almond Butter;
    which has been warmed in the microwave and allow to chill.
