Curried Cashew and Veggie Trail Mix
8 1/4 cup servings

 

[ INGREDIENTS ]

Raw Cashews
Fresh Lemon Juice
Coconut Nectar or Honey
Salt
Garam Masala or Curry Powder
Turmeric
Cumin
Cayenne
Freeze Dried Vegetables

 

 

 

[ INSTRUCTIONS ]

  1. Preheat oven to 400 F or 200 C.
  2. Line a large baking sheet with parchment paper.
  3. Spread :
    2 Cups Raw Cashews
    on the baking sheet and place into the oven for 8 minutes.
  4. In the meantime, make the flavoring.
  5. In a large bowl, mix :
    1 1/2 Tablespoon Fresh Lemon Juice;
    1 Tablespoon Coconut Nectar or Honey;
    1 Teaspoon Salt;
    1 Teaspoon Garam Masala or Curry Powder;
    1/2 Teaspoon Turmeric;
    1/2 Teaspoon Cumin;
    1/8 Teaspoon Cayenne ( Optional );
    until uniform.
  6. Once the cashews are done, cool until easy to handle and add to the mixture.
  7. Carefully mix until all of the cashews are coated.
  8. Place the seasoned cashews back onto the baking sheet,
  9. Place the seasoned cashews back into the oven for 4 more minutes.
  10. Cool completely, then toss in a clean large bowl with
    1 Bag Freeze Dried Vegetables;.
  11. Store in an airtight container for up to 2 weeks.
