Chinese Hot and Sour Soup

[ INGREDIENTS ]

Vegetable Broth
Shiitake Mushrooms
Bamboo Shoots
Water Chestnuts
Soy Sauce
Black Pepper
Hot Sauce
Vinegar
Garlic
Green Onions
Chili Oil

 

 

 

[ INSTRUCTIONS ]

  1. In a large pot, bring :
    6 Cups Vegetable Broth;
    to a simmer and then add :
    2 Cups Shiitake Mushrooms, Sliced;
    1 Can ( 8 Ounce ) Bamboo Shoots;
    1 Can ( 8 Ounce ) Water Chestnuts;
    2 Tablespoons Soy Sauce;
    1/2 Teaspoon Black Pepper;
    1 Teaspoon Hot Sauce;
    2 Tablespoons Vinegar;
    3 Garlic Cloves, Minced;.
  2. Allow to simmer for at least 20 minutes.
  3. Add :
    1/2 Cup Green Onions, Sliced;
    to the pot and simmer for about 5 more minutes.
  4. Stir in :
    2 Tablespoons Chili Oil;.
  5. Add additional soy sauce, hot sauce or vinegar to taste.
  6. Enjoy your vegetarian hot and sour soup!

 

 

 

[ NOTE ]

Hot and sour soup is some what light, so feel free to add in some fried tofu or seitan for a boost of protein.

Thicker Hot and Sour Soup :
This recipe makes a thinner broth soup. For a thicker consistency, combine 3 Tablespoons Cornstarch with 3 Tablespoons Cold Water. Mix well and add to the soup after it has cooked for 20 minutes. Simmer the soup for 5 minutes, stirring it as it thickens. Once thickened, add the green onions and simmer 5 more minutes.
