- Heat :
 1 Tablespoon Coconut Oil; in a large soup or stock pot.
- Add :
 1/2 Large Onion, Chopped;
 3 Garlic Cloves, Minced;
 2 Celery Ribs, Chopped;
 2 Carrots, Sliced;.
 
- Heat, stirring, for 3 to 4 minutes, until onions are soft.
- Add :
 2 Cups Mixed Chopped Vegetables, ( Cauliflower,
                  Zucchini, or Green Beans ); and heat for just another minute or two.
- Add :
 1/2 Teaspoon Salt;
 1/2 Teaspoon Garlic Powder;
 1 Teaspoon Thyme;
 1 Teaspoon Oregano;
 stirring to coat the vegetables well.
-  Add :
 1 Bay Leaf;
 8 Cups Vegetable Broth;
 and bring to a simmer.
- Add :
 2 Cups of Fresh Chopped Tomatoes; stir, and allow to simmer until all the vegetables are cooked, about 8 to 12
                minutes.
- Adjust seasonings to taste.
- Remove the bay leaf.
- Serve your homemade vegetable soup.
