Homemade Vegetable Soup

[ INGREDIENTS ]

Coconut Oil
Onion
Garlic
Celery
Carrots
Mixed Chopped Vegetables, ( Cauliflower, Zucchini, or Green Beans )
Salt
Garlic Powder
Thyme
Oregano
Bay Leaf
Vegetable Broth
Fresh Chopped Tomatoes

 

 

 

[ INSTRUCTIONS ]

  1. Heat :
    1 Tablespoon Coconut Oil;
    in a large soup or stock pot.
  2. Add :
    1/2 Large Onion, Chopped;
    3 Garlic Cloves, Minced;
    2 Celery Ribs, Chopped;
    2 Carrots, Sliced;.
  3. Heat, stirring, for 3 to 4 minutes, until onions are soft.
  4. Add :
    2 Cups Mixed Chopped Vegetables, ( Cauliflower, Zucchini, or Green Beans );
    and heat for just another minute or two.
  5. Add :
    1/2 Teaspoon Salt;
    1/2 Teaspoon Garlic Powder;
    1 Teaspoon Thyme;
    1 Teaspoon Oregano;
    stirring to coat the vegetables well.
  6. Add :
    1 Bay Leaf;
    8 Cups Vegetable Broth;
    and bring to a simmer.
  7. Add :
    2 Cups of Fresh Chopped Tomatoes;
    stir, and allow to simmer until all the vegetables are cooked, about 8 to 12 minutes.
  8. Adjust seasonings to taste.
  9. Remove the bay leaf.
  10. Serve your homemade vegetable soup.
