One Pot Vegan Chili Mac

[ INGREDIENTS ]

Extra Virgin Olive Oil
Yellow Onion
Garlic
Cremini Mushrooms
Tempeh
Chili Powder
Smoked Paprika
Oregano
Cumin
Cayenne Pepper ( Optional )
Salt
Vegetable Broth
Pinto, Kidney, or Black Beans
Fire Roasted Crushed Tomatoes
Tomato Paste
Sweet Corn
Elbow Pasta
Salt
Black Pepper
Sugar

 

TOPPINGS ( Optional )

Shredded Cheese
Chopped Fresh Cilantro
Sliced Scallions or Diced Red Onions

 

 

 

[ INSTRUCTIONS ]

  1. In a Dutch oven, heat :
    1 Tablespoon Extra Virgin Olive Oil;
    over medium heat.
  2. Once the oil is hot, add :
    1 Medium Yellow Onion, Diced;
    and cook for 2 minutes,
    seasoning with :
    A Pinch of Salt;.
  3. Add :
    6 Cloves Garlic, Finely Chopped; 1
    8 Ounces Cremini Mushrooms, Chopped;
    1 ( 8 ounce ) Block of Tempeh, Grated or Crumbled;
    and cook for 5 more minutes.
  4. Add :
    1 Tablespoon Chili Powder;
    1 Teaspoon Smoked Paprika;
    1 Teaspoon Oregano;
    2 Teaspoons Cumin;
    1/2 Teaspoon Cayenne Pepper ( optional ); 1
    1 1/2 Teaspoons Salt, plus more to taste;.
  5. Stir the spices into the vegetables and cook for 1 minute, or until fragrant.
  6. Pour in :
    4 Cups Vegetable Broth;
    to deglaze the pan, scraping up any browned bits on the bottom of the pot.
  7. Add :
    1 ( 15 ounce ) Can Pinto, Kidney, or Black Beans, Drained and Rinsed;
    1 (28 ounce ) Can Crushed Tomatoes, Fire Roasted;
    2 Tablespoons Tomato Paste;
    1 ( 15 ounce ) Can Sweet Corn, Drained and Rinsed;
    10 Ounces Elbow Pasta;.
  8. Stir well to combine.
  9. Bring the mixture to a boil, then reduce the heat to maintain a simmer.
  10. Cook for 15 to 20 minutes, or until the pasta is cooked through.
  11. Season with :
    Salt, to Taste;
    Black Pepper, to Taste;
    and stir in :
    2 - 3 Teaspoons Sugar;. 2
  12. Taste for seasonings again and adjust accordingly.
  13. If using vegan cheese, sprinkle it all over the top of the chili mac.
  14. Cover the lid and let warm through for a few minutes.
  15. Allow chili mac to rest at least 15 minutes before serving.
  16. Top with fresh chopped cilantro and and any other desired toppings.

 

 

 

[ NOTE ]

1 To add more heat, sauté some jalapeño peppers or a serrano pepper along with the garlic.

2 Substitute for a healthier option maple syrup, coconut sugar, or brown sugar. The sweetness helps balance the spices and take some of the edge off from the heat.
